My "back porch" is my kitchen, my favorite room in the house. Come on in, the coffee is fresh, and I just made a pitcher of sweet tea. The cookies will be out in a minute. I have over 40 years of recipes to share with you, along with my opinion on everything. Oh my, you are right, it is cocktail time. What can I get you? Of course I can make you a Mint Julep! Chicken Mango Chopped Salad

You will not believe how good this is. In my opinion there is nothing you can do wrong to a mango. This is the perfect hot summer night supper.

Chicken-Mango Chopped Salad
4 servings
print recipe

1/4 cup mayonnaise
1/4 cup sour cream
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 teaspoons curry powder
1 teaspoon grated fresh ginger
1/2 teaspoon salt
1/8 teaspoon ground cayenne pepper
3 cups chopped or shredded cooked chicken
4 cups chopped Napa cabbage
2 cups peeled, pitted and chopped mango
1 small red bell pepper, chopped
1/2 English cucumber, chopped
1/2 cup chopped fresh cilantro
1/4 cup chopped red onion

Whisk together first 8 ingredients in a small bowl.

Combine chicken and remaining ingredients in a large bowl. Add dressing, tossing to coat. Serve immediately.
